These avo tuna boats are so satisfying and delish! And a little bit of fresh thyme on top just gives it that extra kick of flavor! I made and photographed this recipe in just a few minutes. Literally was one of the easiest things I have ever made.

And it’s chocked full of protein and brain food to keep you going throughout the day!

behind the scenes eating: avocado chicken galore!

It’s so funny how everyone comments on all the yummy things I get to eat (which yes, I do eat a lot of homemade dishes), but what they don’t see is my everyday norm.

But the fact that will I eat chicken and avo salads for every meal five days in a row never really makes it’s way to the big screens. Because I guess that would be pretty boring… A blog made up of only chicken avo salads; BORING!

Times when I’m not making recipes for the blog, it’s just plain old easy cooking. I throw my veggies in a bowl, top it with some baked chicken, and dressing. Baked chicken breast from Trader Joe’s is my staple protein then I add in all my veggies in around it. Busy life = easy eating. So, to mix it up I’ve been prepping these pretty little avo boats to keep me fueled throughout the week.

Also, can I just say the only thing I’ve beencravingthis week is avocados!! Like, all of them. I don’t know why… Send help, please!

  • 1 6oz. can wild caught tuna or wild caught salmon, which I love!
  • 2 ripe avocados cut in half and pitted
  • 3 tablespoons paleo mayonnaise
  • 4 tablespoons relish or cucumber pieces for whole30
  • 1 green onion sliced in small rounds
  • black pepper flakes to taste

Ingredients

  • 1 6oz. can wild caught tuna or wild caught salmon, which I love!
  • 2 ripe avocados cut in half and pitted
  • 3 tablespoons paleo mayonnaise
  • 4 tablespoons relish or cucumber pieces for whole30

Instructions

  1. For the filing combine all the ingredients (except the avocados) and mix.

  2. Fill the avocado halves with a large scoop of filling (I use an ice-cream scoop for this). Top with more green onion and fresh thyme leaves if you want.

    8/9/17 Tried a rendition of this recipe this morning for a breakfast/lunch snack and I loved it! I would recommend it, in fact, I did recommend it to my boss. So give it a try!

    HI! I’m all new to this Whole30 and I have a question. I use Follow your heart no soy veganaise, is it whole30 approved? Can I use that instead of the paleo mayo?

    What is the nutritional value of these. And the serving per person in 1/2 an avacado correct? I want to add it to my carb manager but the tecipe doesnt say anything on nutritional facts. Also what would it be with chicken instead of tuna?

      Hi Gabrielle, the nutrition value is a the end of the recipe- based off of one serving (1/2 boat).

    For Whole30, what is the carb in the meal? I added the avocado to the chicken salad. Yours says don’t do that. Why? Thanks!
