So why oh why may you ask, are you posting another one?

Well patties are a favorite of mine. You can literally mix a few ingredients together with something to bind, form them into a shape of your desire and viola, delightful morsels of yumminess.

The other great thing about patties is that that are yummy served either hot or cold. So are a great food for lunch boxes or picnics.

I've made a batch of these several times and they have gone quickly when shared among friends.

The sweet potato and tuna is a match made in heaven, against the little specks of red onion and bell pepper.

I like to serve these with a salad and a homemade yoghurt dip or even salsa. They would be great with some mayo too.

Tuna and Sweet Potato Patties

Yield: 8 patties (approx)

Prep Time: 10 minutes

Cook Time: 45 minutes

Total Time: 55 minutes

This recipe is gluten free, dairy free, whole30, paleo, Slimming Eats and Weight Watchers friendly

Ingredients

  • 2 medium sweet potatoes (approx 600g/21oz)
  • ½ red pepper, finely chopped
  • ½ red onion, finely chopped
  • 3 eggs
  • 1 teaspoon of salt
  • ½ teaspoon of black pepper
  • 2 cans (280g) of tuna
  • 1 small zucchini, grated (squeeze out excess moisture)
  • fresh chopped parsley
  • spray oil

Instructions

  1. Pierce sweet potato with a fork and microwave for approx 8 mins till slightly soft. Cut in half, scoop out flesh and roughly mash in a large bowl (If you prefer, you can steam in a steamer until fork tender)
  2. Preheat oven to 200c or 400f (gas mark 6)
  3. While the sweet potato cools down, Spray a frying pan over a medium heat with some spray oil. Saute the onion to soften, stir in the red pepper and zucchini and just fry for couple of mins.
  4. Add this to the sweet potato, along with the tuna, salt, pepper, eggs and fresh chopped parsley.
  5. Combine all ingredients together.
  6. Line a baking tray with some parchment paper, form the mixture into equal sized patties, place on tray and bake in the oven for approx 35 mins till edges are golden and patties are firm.
  7. Serve with your choice of sides and a dipping sauce of your choice.

    Do you think these would work if I substituted butternut squash for the sweet potato, or would that be too wet? Thanks!

      Hi Fran, I am not sure they would hold together with butternut squash. They would like fall apart when trying to lift from the tray.

    Is 280g the total weight for tuna or is it two tins at 280g which would be 560g
    Sorry for asking this it's just my mixture seems a bit too wet and thought maybe I hadn't put in enough tuna

    I used two tins of tuna, no zucchini (none in the cupboard) and coriander ... the mixture was runny because of the two tins (seen that I only need one from now on) but, I made the patties and they are a complete lifesaver...so tasty. If I'm out and about I just put some speedy green salad in a tupperware, a bit of thai bean salad sprayed with lemon juice and salt and pepper, pop in a couple of these and I'm good to go. Ive never left a food review before ... but this is well deserved,

    Hi Shevy, I made these the other day and they were lovely, going to make them again for our taster in the morning. Do you think the mixture would be ok to make up today and bake tomorrow, I would like these to be fresh out of the oven for the taster but don't have time in the morning to make from scratch so thought I could prepare them today. Also, how would you do a low syn dip, fromage frais and mayo or what could you suggest?
